What does 'adobo' mean?

Wondering where we got our name? Well, adobo is Spanish for sauce, seasoning, or marinade, and is used mainly in Latin American cooking.

It's primarily used as a marinade for meat dishes, such as chipotles en adobo in which chipotles (smoked jalapeño peppers) are stewed in a sauce with tomatoes, garlic, vinegar, salt, and spices.

In addition to the chipotle chilli pepper, two other varieties are used in the signature adobo marinade, as well as other herbs and spices.
